I kept my rosettes in here

This is the freezer door wher I kept my little rosettes made of razor thin orange and lemon slices while I was the chef at Ciccones an italian restaurant on King St West in the fashion district of Toronto.

The little rosettes were frozen into shape and I would place one on each plate that I sent out bordered by leaves from fresh mint or Italian flat parsley like a little flower garnish. They worked exactly the same as a small sherbert. A palette cleanser.
